Aniseed in a sorbet sounds like a mistake until you taste it. The liquorice flavour is not strong. It runs underneath the blackberries like a warm current, making them taste more complex than plain blackberry sorbet ever does. Sugar dissolved in hot water, steeped with aniseed for ten minutes, strained, then mixed with fresh blackberry puree and churned.

The blackberries need to be strained after blending. Seeds in a sorbet are unpleasant. Push the puree through a fine sieve until only dry seeds remain. The result is a smooth, deep purple sorbet with a warm finish. These don’t last long here.


Tips for Making Blackberry Aniseed Sorbet

Infuse the aniseed for exactly ten minutes

Five teaspoons of aniseed steeped in the hot sugar syrup. Ten minutes gives a noticeable but not overpowering flavour.

Longer than ten minutes and the liquorice becomes dominant. Less and you wonder what the point was.

Strain both the syrup and the puree

Strain the syrup to remove the aniseed. Strain the blackberry puree to remove the seeds. Two separate straining steps.

Combine the strained syrup and strained puree, then churn. The mixture should be completely smooth before it goes into the ice cream maker.
