Grilled Tofu with Teriyaki Sauce

Grilled Tofu with Teriyaki Sauce

Grilled tofu does not have to taste like nothing. Press it, slice it, cook it on a hot griddle until golden brown, and pour a homemade teriyaki sauce over it while it is still on the heat. Soy sauce, honey, rice vinegar, sesame oil, and cornstarch whisked together and simmered until thick. The sauce glazes the tofu and turns it sticky and caramelised. Sesame seeds and chopped chives on top.

The pressing is the step most people skip, and it is the reason most people think tofu is bland. Pressed tofu has a firmer texture and browns on the griddle instead of steaming. The teriyaki sauce sticks to the surface and caramelises in the heat. These slices taste like the best part of a teriyaki bowl.

Tips for Making Grilled Tofu with Teriyaki Sauce

Press the tofu first

Wrap the block of firm tofu in paper towels and place a heavy pan or plate on top. Press for at least fifteen minutes to squeeze out excess water.

Dry tofu browns. Wet tofu steams. Skip this step and the tofu will never brown properly.

Pour the sauce over the tofu on the griddle

Mix the soy sauce, honey, rice vinegar, sesame oil, and cornstarch. Pour it over the grilled tofu slices while they are still on the heat and let it simmer for a few minutes.

The sauce thickens as the cornstarch cooks. It should coat the tofu like a glaze, not pool at the bottom of the pan.

Frequently Asked Questions

What kind of tofu?

Firm or extra-firm. Silken tofu falls apart on a griddle. The firmer the tofu, the better it holds its shape and absorbs the sauce.

Can I bake the tofu instead?

Yes. Bake pressed tofu slices at 400 degrees F (200 degrees C) for twenty minutes, flipping once. Pour the teriyaki sauce over during the last five minutes.

Is this vegan?

Check the honey. Some vegans avoid honey. Substitute maple syrup or agave for a fully vegan version. The rest of the ingredients are plant-based.
