Sparkling Peach Lemonade
I made a pitcher of this for a backyard lunch and watched it disappear in under thirty minutes. Ten lemons juiced, three peaches, three pears, and five apricots cooked with sugar and water until soft, then blended into a smooth puree. Chilled. Mixed in a pitcher with ice, the lemon juice, and topped with sparkling water.
The fruit puree is thick and sweet, and it turns the lemon juice into something richer than regular lemonade. The pear and apricot smooth out the tartness while the peach stays bright and recognisable. The sparkling water lifts everything. It fizzes in the glass and makes each sip feel light and cold.
Tips for Making Sparkling Peach Lemonade
Cook the fruit until completely soft
Peaches, pears, and apricots with sugar and water over medium heat for about five minutes. The fruit should be collapsing and the liquid syrupy.
Blend until completely smooth. Strain if you want a clearer drink. Unstrained has more body and flavour.
Add sparkling water last
Mix the fruit puree and lemon juice in a pitcher with ice. Top with sparkling water and stir gently once.
Aggressive stirring releases the carbonation. Pour the sparkling water slowly and fold once with a spoon.
